剛出爐的蘋果司康外層酥香,內部鬆軟,因砂糖添加較少,更凸顯出蘋果本身的清香與酸甜。以手工熬煮的蘋果餡加上些許肉桂後,甜美風味更加乘,美味絲毫不輸專業烘焙店。
製作中在司康麵糰裡加入了大量的新鮮蘋果丁,使得內部口感更加鬆軟。這是一款英式下午茶裡常見的點心,通常搭配奶油或果醬一起食用,是非常親近而且好上手的甜點料理唷~~

Freshly baked apple scones are crispy on the outside and soft on the inside. Because less sugar is added, the fragrance and sweetness of the apple itself are highlighted. 材料 food preparation
主麵糰 master dough
中筋麵粉 all purpose flour 200g
無鹽奶油 unsalted butter 50g
鮮奶 milk 50ml
砂糖 sugar 35g
酵母粉 instant yeast powder 10g
雞蛋 egg 1顆
杏仁片 almond slices 適量/appropriate amount
蘋果餡 apple filling
新鮮蘋果 fresh apple 1顆 (約150g)
無鹽奶油 unsalted butter 20g
砂糖 sugar 10g
肉桂粉cinnamon powder 少許/a little
步驟做法 steps
1. 將蘋果削皮切丁,倒入小鍋中,加入奶油、糖、肉桂粉,開小火煮至奶油融化且蘋果丁變軟後關火備用。
Peel and dice the apples, pour them into a small pot, add butter, sugar, and cinnamon powder, cook over low heat until the butter melts and the diced apples become soft, then turn off the heat and set aside.
2. 麵粉、酵母粉、砂糖混合均勻。
Mix flour, yeast powder, and sugar.
3. 將冷凍切成小丁塊的奶油加入,用手將奶油搓揉捏入粉糰裡,讓奶油都被麵粉包覆,約是粉糰呈現均勻粗顆粒狀態即可。
Add the frozen cream cut into small cubes, and knead the cream into the dough with your hands, so that the cream is covered by the flour, and the dough is in a state of uniform coarse particles.
4. 在粉糰中間挖一個洞,倒入蛋液、鮮奶,將周邊粉糰向中間拌入覆蓋蛋奶液,動作要輕柔不要按壓 (過度攪拌或按壓會影響口感),混合至沒有粉末。
Dig a hole in the middle of the dough, pour in the egg liquid and fresh milk, and stir the surrounding dough into the middle to cover the egg milk. Be gentle and do not press (over-stirring or pressing will affect the taste), and mix until there is no powder.
5. 加入蘋果餡再輕輕拌勻,之後用保鮮膜包起冰凍20分鐘再取出 (麵糰稍微冷凍定型後續才好塑形)
Add the apple filling and mix gently, then wrap it in plastic wrap and freeze for 20 minutes before taking it out (The dough is frozen and set, and it is better to shape later)
6. 將麵糰擀成約2cm厚度,並用杯口壓印塑形。
Roll out the dough to a thickness of about 2cm, and press out the shape with the mouth of the cup.
7. 把塑形完成的麵糰排列到已鋪好烘焙紙的烤盤上,並在表面刷上一層蛋液,放上些許杏仁片裝飾。烤箱溫度設定180度烘烤20分鐘,待上色後即完成。
Arrange the shaped dough onto a baking tray lined with baking paper, brush the surface with a layer of egg liquid, and decorate with some sliced almonds. Set the oven temperature to 180 degrees and bake for 20 minutes. It will be finished after it is colored.
烘烤上色完成即可出爐放涼
After baking and coloring, take out of the oven and let cool.
