Neat/Straight (up)/On the Rock- 酒的喝法

這三個詞彙放在一起是因為他們都是指酒的喝法,最常見的就是在酒吧點威士忌、白蘭地等純飲的烈酒。首先 neat 是指直接從酒瓶中倒出,也就是常溫不加冰的酒。

 

neat 比較相近的是 straight,但這個詞定義比較模糊。用在威士忌、白蘭地等較多人純飲的酒類上意思類似 neat;但白色烈酒像伏特加,通常 straight 會是冰過後倒出來。(都是沒加冰塊跟稀釋的。)

 

 

但如果說 straight up 又是完全不同意思了。straight up 則是有稀釋過,是跟冰塊搖盪或攪拌後,把冰慮掉後再倒出。所以跟 neat straight 比是有經過融水稀釋的,又可以直接稱為 up

 

最後則是 on the rock,這是一個小編剛看到完全理解不能的單字,是要在什麼石頭上面?其實 on the rock 的意思就是加大冰塊的喝法啦!或許是因為冰塊冰球長得像岩石。

 

Jigger- 量酒器

 

調酒器材中最奇怪的名字就是 jigger 了吧!jigger 是量酒器的意思,不過這個單字跟其他量杯等的字詞完全沒關係。jigger 一開始是指一小杯酒或是裝的容器(就像是 shot shot 杯的另一種說法),後來則沿用到量酒器上。

 

Dash/Drop- 苦精…等等的計量單位

在調酒的時候,不是所有材料都是用 ml ounce 來計算份量。有時會看到 dash 或是 drop,這到底是什麼單位呢?

dash 的話有翻譯成抖振,最常見的就是在添加苦精時。苦精瓶的瓶口通常會有一個開了小孔的蓋子,因此每次倒的量都不多,通常說 1 dash 就是拿苦精甩一下的量。但是 dash 其實不是準確的單位—畢竟不是每家苦精甩一下的量都會一樣。

 

所以 1 dash 大約是多少呢?大概是略少於 1 ml 的量。至於 drop 又比 dash 更小,通常都會是用滴管滴一滴的量。有一說 10 drop 等於 1 dash ,所以 1 drop 差不多就會是 0.1 ml

 

Rolling- 類似拉茶的調製手法

 

學調酒時必學的調製手法,通常一開始只會學到直調法(build)、搖盪法(shake)和攪拌法(stir)。但其實還有一種做法— Rolling,也有人稱為滾動法。

 

Rolling 的調製法有點像是拉茶,就是將酒液在兩個容器中來回拉高倒入,使用 Rolling 的調酒最有名的就是血腥瑪麗。不過比起其他幾種調製法,Rolling 的上手難度較高,通用度也較低,所以在初學時比較少會接觸到。

 

Peel- 噴附皮油

 

peel 是在裝飾調酒時最常聽見的單字。這個字是「果皮」的意思,在許多調酒中都會使用柳橙或檸檬皮作為裝飾,在台灣 peel 通常也會指噴附皮油。

 

柑橘類的水果表皮上富含油脂,這些皮油也帶有許多香氣。噴附皮油就是對著調酒,擠壓或扭轉果皮讓這些皮油能附著在調酒與酒杯上。如此拿起調酒時就能明顯感受到柑橘類的香氣。

 

Garnish- 裝飾物

 

既然提到了裝飾,裝飾的英文也是一個常見的單字。不管是放了檸檬皮檸檬片檸檬角;或是橄欖果水果各種花花草草,所有的裝飾都叫做 Garnish

 

順帶一提柑橘類的裝飾除了果皮是 peel 外,角的英文是 wedge;片的英文是 slice,如果是旋轉的果皮則是 twist(果皮:你不要旋轉我!)。

 

Rinse- 潤杯

前面幾個單字都算常見,可能大家或多或少都認識一些,但是 rinse 這個字就真的比較少見了。

 

 

Rinse 指的是一種手法,中文翻譯是潤杯或是洗杯。是將一些些烈酒倒入杯中,然後旋轉杯子讓酒液沾附在杯壁上,再把多餘的酒倒出。這樣的作法是讓調酒倒入杯中後,能帶有 rinse 的酒的香氣,增加調酒的層次。例如 Sazerac 賽澤瑞克這杯調酒,有些就會使用艾碧斯 rinse

 

除了 rinse 可以增加香味層次外,也有其他做法。例如 Penicillin 盤尼西林這杯調酒特別強調威士忌的煙燻味,因此有些調酒師會在調製完後,浮上一層明顯煙燻味的威士忌,這種做法則稱為 Float

 

Twist- 變化版

 

咦?Twist 不就是旋轉的果皮嗎?其實它還有另外一個意思!有時候會聽到某杯調酒是什麼什麼(可自行帶入經典調酒名字)的 twist,其實就是在說這是一杯變化版。有時候可能調酒師的靈感是某杯經典調酒,他使用相似的元素但又加入了自己的創意,這樣就會是一杯經典調酒的 twist

 

 

  • Cocktail 雞尾酒/調酒

相信常泡在酒吧的人一定點過調酒,調酒/雞尾酒的英文即是 cocktail,調酒通常會用基酒(base)作為基底材料,通常做為基酒的酒精濃度會較高,然後再加上其他酒精濃度較低的酒類或是搭配一些水果、香料(spice)製成,也有些酒會用利口酒/香甜酒(liqueur)作為基底調配。而 punch 指的是酒吧或派對裡自助吧台上一大碗自行取用的調酒。
