Lime & Honey Mousse Cake
Ingredients: (6")
2 pieces sponge cake base
270g Cream
2 Egg White
75g Sugar
50g Water
10g Gelatine
2.5 pieces of green lemon for getting juice
35g Honey
Method:
1. Combine sugar and water. Boil until it is 120C
2. Beat the egg white until it folds, slowly add in sugar mixture and mix well
3. Soak gelatine in cold water until it is soft. After that melt it and add into egg white mixture
4. Add in lemon juice and honey into egg white mixture
5. Combine the misture with fold and beat cream
6. There are two leves of mousse with 2 basic sponge cake
It is very good! The taste is fresh and clean. Eneryone likes it!
