口味的差異

Chatting with friends about the traveling, food always comes as one of topics and it's a topic that everyone pays attention to.

In Taiwan, it appears that the taste of food inclines to be sweeter when going to southern part, the further southern, the sweeter.

In China, among the costal cities in the east, Shanghai is a kind of turning point city to me as well as most Taiwanese people.  Those in the north to Shanghai, appeared to be salty and oily; and those in the south of Shanghai appeared to be more like Taiwan, not as salty.

In Southern part of Fujien, the way to cooking is very similar to Taiwan's but without Japanese influence, such like in Taiwan it's popular to serve green mustard (wasabi) with seafood but in Fujien even the dish of seafood is very similar to the one in Taiwan, there won't be any green mustard served to accompany the dish.

A dish of raw fishes which is also very popular in Taiwan.  There are shrimps (ぼたんえび、ボタンエビ), Spotted halfbeak(さより)and flounder(ひらめ)in it, the combination is rather Japanese taste.
