[食譜] 印度香料奶茶Recipe of Masala Tea
發現自己每回在facebook上發布幸湖的奶茶時刻
時不時就招徠一頓撻伐Orz
明明我也總是大方公布奶茶的材料跟煮法了嘛...
好吧

材料 Ingredients:
1. 印度碎紅茶茶葉 India black tea
2. 肉桂棒 cinnamon stick
3. 丁香 clove
4. 小茴香 cumin
5. 小荳蔻 cardamom pods
6. 肉桂粉 cinnamon powder
7. 黑胡椒 black pepper
8. 老薑 a tiny chunk of ginger root
9. 牛奶 milk

我的黑胡椒是來自「地球樹」fair-trade black pepper
肉桂粉是在...忘記了...
我的用量 suggested use (for 1-4 cups):
我寫的是我喜歡的口味,但大家可以自行調整 for reference only. it's up to you actually.
1. 茶葉 - 不一定(第一項就被飛踢)埃悠!我都是邊加邊看顏色的啦 depends on you or see the instruction below
2. 肉桂 - 一小段,如圖 a short stick, see the picture below
3. 丁香 - 我喜歡這味道而且它好難用完所以會放個7~8顆(再度被飛踢)
4. 茴香 - a little, see the picture below
5. 荳蔻 - 放2顆就好免得太涼,記得剝開 just 2 and don't forget to shell each one
6. 肉桂粉 - 有些人不愛肉桂也可以不放 as much as you like
7. 黑胡椒 - more more more!我喜歡黑胡椒,而且奶茶的暖暖其實是來自黑胡椒 it makes your tea taste warm and spicy.
8. 老薑 - as small as possible!!! 剛開始煮奶茶時我以為奶茶的暖暖辣辣是從薑來的,或許它是其中一個影響因素,但如果天真地以為放很多=暖暖辣辣,你只會得到一杯充滿中藥味的奶茶...
9. 牛奶 - 以上的香料用量,一到四(咖啡)杯吧 1-4 cups for those masala I mentioned above
做法 Instructions:
把所有香料,除了肉桂粉,放到鍋子裡加熱到散發香味
pour the masala 1234578 into the pot, heat it until the smell filled.
加一點水再煮一下下
add a little water
加入牛奶,中小火煮到將要沸騰
add milk, simmer the milk and bring them to "almost" a rolling boil
加入茶葉,份量要看你喜歡的顏色,我喜歡深一點,茶味濃
add black tea, quantity is depends on the colour you like,
I personally prefer masala tea with strong fragrance of tea instead of creamy.
沸騰2-3次,讓空氣進去,口感更滑順
boil it for 2-3 times, make the tea smoother.
喜歡肉桂的人這時可以灑一點肉桂粉
add some cinnamon powder if you like
完成啦
done!!!
小提醒 NOTES:
如果味道不太好,通常問題都出在薑的用量,越少越好,沒放也沒差
if it tastes weird, check the quantity of ginger
AS SMALL AS POSSIBLE.

so this is my supper tonight, masala tea and saag paneer.
Making paneer(cottage cheese) is sooooooo easy that you must try once and get a perfect paneer in the way you like. I will share the recipe some other time, or just google for "paneer recipe", there are A LOT!tips for paneer are TEMPERATURE and PRESSURE.
