請問：用虹吸式咖啡壺煮咖啡的時候，怎樣煮才能煮出咖啡渣成小山丘狀？因為成小山丘狀表示這壺咖啡煮的好喝，還不是隨便煮煮就能看到那小山丘呢！

李雲答：

針對賽甕的煮法，攪拌咖啡粉的"手路"有好多種，各家不一：

1.十字攪拌法，這樣的咖啡渣約為平面。
2.左右攪拌法，這樣的咖啡渣約為小丘。
3.順逆時鐘攪拌法，這樣的咖啡渣為大丘。
4.不用木片，直接順逆時鐘晃動賽甕法，這樣也為大丘。

通常１跟２會互搭使用。

其實攪拌咖啡粉的用意在於如何讓它能平均地浸泡在熱水中，不讓粉狀物某部份過度浸泡，某部份卻發生無效浸泡，最後適當的釋出咖啡成分，所以並不必拘泥於咖啡渣最後是什麼形狀。

不管用什麼攪拌方式，若攪拌的均勻，當咖啡液體降到下方後，上半部的咖啡渣會呈現分層的現象，粗細自動分層。

另外需要冷布抹拭下座的做法，是調整咖啡粉浸泡於熱水中的時間，若下漏的速度過慢，咖啡容易焦掉，產生澀味；下漏的速度過快，無法浸泡出咖啡成分。所以，這得視咖啡的產地，特性，咖啡粉的粗細，室溫，水的熱度....以及當時的心情....依據經驗來研判冷布擦抹下壺的面積及時間。

一杯好的手煮咖啡，價值不是撕達巴克或八時五度死的機器咖啡可以比擬的，懂了沒！
