Marinate Loin of Pork 紅莓汁醃豬排

1 rack of Prok (leg)

For Marinade:

2 garlic loves, crushed
1 carrot, diced
1 onion, diced
7 Ts red wine vinegar
1 1/4 cupsred wine
4 Ts olive oil
1 ts black peppercorns
1 1/2 T salt
1t sugar
2 bay leaves
4 fresh thyme springs
12 juniper berries (have no idea what this is, i use---1/4 cranberry jello)


Cook all ingredients bring to a boil, simmer for 2 minutes, cool down.
Place pork with the sauce, cover and chill for 48 hours. (3 days @@ ,skip mother's day and sunday)


Drain and brown the pork with oil pan, and baked 400F for 40 mins.

Pourr excess fat and use 3/4 cup plus 2Tbs marinade liquid. Strain into clean pan and boil until the liquid reduced to half. Add in 2Tbs butter, add in salt or petter if desired.
