Lemon Soufflé


i read a funny article on the Liberty Times about the 4 types of women would turn off a man, and they are 大和拜金女、嗆辣毒舌女、超級玩美女、悲觀愛哭女。 If one asks me where do I fit in, I would have to say all of above, except that beautiful part. Having that 4 evil personalities behind an feminine face, you would get one 『B。I。T。C。H。』

hummm… I just remember a friend who used to call herself a witch and a bitch. Oh… my …gosh… I just could believe how similar she and I have become. But looking on the bright side, evil witches live in Disneyland with Snow White and mermaids.



Perhaps I always believe it is a privilege that I am an independent person, emotionally and physically, with an independence that allowed me to pursue a lifestyle that I desired, and with ability to 拜金、毒舌、愛玩、and愛哭。 With that kind of independence, it wouldn’t be hard to guess my marital status. Sad or fortunate, good or bad, whether people agree or not, it is a privilege, like making soufflé。。。 (How does witch and bitch have anything to do with soufflé? Well, it does not matter, because that is how I am going to write it!)

yeah..soufflé…..記得小時候 媽媽很喜歡做『媽媽樂』,就是蛋加水加鹽和點油。一碗飯加『媽媽樂』混一點肉鬆,真的很好吃,不只小時候很愛吃,我到現在還是很愛吃。長大後,才知道那是媽媽版的日式蒸蛋,只不過裡面沒有高湯,也沒有海鮮或魚板。 但同樣的蛋料理,法國出了soufflé。。。

Ingredient

2 egg white

2 egg yolk

100 ml milk

Unsalted butter to grease the ramekin

9 g of white granular sugar

9 g of ice sugar

9 g of flour

9 g of unsalted butter

Lemon zest + 1 TSP lemon juice



Instruction

1. grease the ramekin with unsalted butter and coat a layer of ice sugar with a shiver. Remove the excess of sugar by flip the ramekin upside down. and put the ramekin into the refrigerator to make it cold before baking them.

2. heat the milk to simmering point and turn off the heat, add the flour, butter, and 1 TSP of sugar, blend in the egg yolk, zest and juice at the end.

3. beat the egg white + sugar to get margarine

4. blend 1/3 of the margarine to the egg mixture well, then fold the rest of the margarine into the mixture

5. bake for 15 min at 180 C
